Bruschetta with Tomato & Prosciutto

Ingredients

  1. 1 ciabatta roll
  2. 6-8 ripe cherry tomatoes
  3. 1 1/2 tbsp red wine vinegar
  4. 4 tbsp olive oil
  5. 1 clove of garlic
  6. 8 slices prosciutto
  7. a few basil leaves, shredded
  8. salt and pepper to taste

Directions

  1. Cut cherry tomatoes into quarters and put into a bowl. Add basil leaves, red wine vinegar, olive oil, and some salt and pepper. Give the mixture a stir and set aside.
  2. Toast 4 thick slices of ciabatta, then rub one side with a halved fat garlic clove. Place on serving plates and spoon over the tomato mixture. Drape each bruschetta with 2 slices of prosciutto and serve with a bottle of Rosemount Diamond Label Sauvignon Blanc.
