Serves 4
Ingredients
- 1 vanilla bean
- 1 generous cup of Rosemount Diamond Label Shiraz
- 1 cinnamon stick
- 4 cloves
- 2 star anise
- 1/2 cup sugar
- 3 figs, cut into quarters
- 1lb 2oz blackberries
- 1 generous cup mascarpone
- 2 tbsp confectioners’ sugar
Directions
- Split the vanilla bean lengthwise, scrape out the seeds with the back of the knife, and set aside.
- Put the wine, empty vanilla bean, cinnamon stick, cloves, star anise, and sugar into a pan and slowly bring to a boil, stirring to dissolve the sugar. Lower the heat to a simmer, add the fruit, and poach gently for 8 to 10 minutes. Let cool completely.
- Put the mascarpone into a bowl and sift in the confectioners’ sugar. Add the reserved vanilla seeds and beat well.
- Divide the poached fruit among four bowls. Serve with the vanilla mascarpone and a bottle of Rosemount Diamond Label Shiraz.
