Spaghetti with Anchovy, Garlic & Parsley

Ingredients

  1. 10 oz dried spaghetti
  2. sea salt and black pepper
  3. 3 tbsp olive oil, plus extra to drizzle
  4. 2 garlic cloves, peeled and thinly sliced
  5. 6 oz marinated anchovies, roughly chopped
  6. bunch of Italian parsley, roughly chopped
  7. freshly grated Parmesan, to serve

Directions

  1. Cook the spaghetti in boiling salted water for 8 to 10 minutes or until al dente.
  2. Heat the olive oil in a large pan, in the meantime. Add the garlic and cook over medium heat until golden brown at the edges. Stir in the chopped anchovies.
  3. Drain the spaghetti and tip into the pan with the garlic and anchovies. Add the chopped parsley and season to taste with salt and pepper. Toss well.
  4. Divide among warm bowls and serve with grated Parmesan, a drizzle of olive oil, and a bottle of Rosemount Diamond Label Riesling.
