Serves 4
Ingredients
- 10 oz dried spaghetti
- sea salt and black pepper
- 3 tbsp olive oil, plus extra to drizzle
- 2 garlic cloves, peeled and thinly sliced
- 6 oz marinated anchovies, roughly chopped
- bunch of Italian parsley, roughly chopped
- freshly grated Parmesan, to serve
Directions
- Cook the spaghetti in boiling salted water for 8 to 10 minutes or until al dente.
- Heat the olive oil in a large pan, in the meantime. Add the garlic and cook over medium heat until golden brown at the edges. Stir in the chopped anchovies.
- Drain the spaghetti and tip into the pan with the garlic and anchovies. Add the chopped parsley and season to taste with salt and pepper. Toss well.
- Divide among warm bowls and serve with grated Parmesan, a drizzle of olive oil, and a bottle of Rosemount Diamond Label Riesling.
